Miss A’s special collaboration with Tiong Hoe coffee. Roasting whole beans with a unique post-harvest process developed in India to replicate the natural aging coffee once underwent during long sea voyages to Europe. Historically, beans stored in humid ship holds changed color and lost acidity by the time they arrived. To mimic this, coffee beans are now exposed to monsoon winds from June to September on India’s west coast. During this 12–16 week process, beans swell, turn pale gold to light brown, and develop a distinct, mellow flavor with low acidity.
