A joint venture between Peter Sisseck the legendary winemaker of Dominio de Pingus and Pablo Rubio ex winemaker of Alonso y Yerro. The winery is based in the area of Castilla y León which gets cooling breezes from the Atlantic and has a different microclimate than other parts of the Ribera del Duero. PSI is a more classic Ribero del Duero wine, which is aged in cement and large wooden vats with minimal barrique usage. Peter Sisseck picks grapes from selected local growers, who have been encouraged to implement biodynamic vineyards, and are paid according to quality in an arrangement similar to a cooperative. One thing noteworthy is that PSI is the brainchild of Peter Sisseck. He sends Pingus’ rough 300 barrels to Pablo for use at PSI for about six months. These Pingus barrels are protected by constant fill with wine. When the next year’s Pingus wines are ready for ageing, PSI is then put back into large vats and Pingus gets its Barrels back in perfect condition.
