Leg of Lamb is a flexible cut that is relatively lean but still includes enough fat to keep the meat juicy when roasted. The bone is present throughout the leg, which enhances the flavour and helps to distribute heat evenly when cooking. A bone-in leg of lamb roasts beautifully for a special occasion. To season, lightly score the fat and, if desired, cut small holes in the meat of the leg and stuff with garlic cloves or rub with a herb paste or compound butter.
